In France, culinary students spend years perfecting the classic sauces of French Cuisine. The right sauce elevates every dish, from ordinary to extraordinary! While these sauces won’t take years, each will help you take your culinary skills to a new level. Join Chef Nick Roberts, formerly of Kobe and Thai Pepper in Ashland, for this demonstration class which includes several easy to make and serve sauces, along their delicious accoutrements. Recipes for this class will include CherryTomatoSalsa, MarinarawithEggplantParmesan and a SpicyTomatoSaucewithRoastedChicken. Students will also learn the recipes and techniques to make a delicious Zinfandeland Thyme Butter Sauce, served over Grilled Lamb Chops and Roasted Fingerling Potatoes, and a rich Root Vegetable Puree, served with Rosemary Chicken Breast and Cream Sauce. Centuries ago, people in Southeast Asia used layers of rice and salt to preserve fish. The fermented rice and fish were stored until ready to be eaten – This original style of sushi, narezushi, is still served in some Tokyo restaurants today. Sushi chefs in the eighteenth century began preparing sushi using fresh and raw ingredients and today, sushi is considered by many to be the ultimate form of culinary indulgence. Join Chef Lizz Keane, Assistant Sushi Chef at Kobe Restaurant for this hands-on sushi class. Learn to make nigiri (the finger sized portions of rice and other ingredients) as well as tekamaki, those nori wrapped rolls with fresh fish, shrimp, vegetables and some surprising ingredients. We’re having a Paella Party , and you’re invited! Come join us for this Spanish influenced party as we demonstrate this popular one-dish meal. Originally Paella hailed from the coastal town of Valencia, and featured the secrets of the sea and the robust flavors of the region. Today, Paella is a perfect party food that makes a hearty meal, and clean up a breeze! Join us for this class and learn the tips and recipes to make Paella Mixta – the classic traditional Paella with Chorizo, Chicken and Seafood. Other recipes will include Trout with Serrano Ham, Roasted Spanish Olives, Andalusian Salad, and finish with a Almond Citrus Cake made with Olive Oil and served with Citrus Compote for dessert! Homemade Sangria and Spanish Wines will also be featured in this class.

Do you know the difference between a dice and a chop? What about mince or a julienne? The importance of knives to the home chef cannot be overstated. According to the New Professional Chef textbook prepared by the Culinary Institute of America, the only piece of equipment in the kitchen more important is the human hand! And learning to use your knives properly protects both! In this hands-on class, students will work with a variety of vegetables to learn the necessary techniques to dice, chop, mince, and so much more. Students will also learn how to remove the breast from a whole chicken and receive an introduction to the proper care, honing and sharpening of your knives. You’ll also learn how to select the right knife for the right job! Students will need to bring at least one chef knife with them to use in this class. Students who wish to purchase knives before or after this class will receive a 10% discount on the day of the class.

Recipes for this class will include Char Siu (Barbecue Pork), Pork Shumai with Spicy Soy, and Pork Bao Buns. Chef Nick will also share recipes, tips and techniques for Black Bean Chicken Stir-fry, Mongolian Beef, and Panko Crusted Halibut with Cilantro Lime Coconut Cream Sauce.
